What’s better than a cup of hot mocha? Coffee brownies: that’s what! Since it isn’t always easy or even convenient to pack a thermos in your lunch box, why not through in some delicious coffee brownies instead? Let me teach you how to whip up your next batch for your busy week or even that business meeting you have with your colleagues tomorrow.
First, you will need to gather up your ingredients. They include salted butter, sugar, unsweetened baking chocolate, instant coffee, hot water, eggs, pure vanilla extract, flour, salt, icing sugar, and unsweetened cocoa powder. You don’t have everything? No problem; your hometown grocery store or even Walmart should have all of these for you. Now that you have everything gathered up, let’s get started.
While you are mixing everything, preheat the oven to 325 degrees Farenheight. Now let’s begin making the brownies. You need to simmer some water in a double broiler. Don’t have one? Then just simmer a pot of water and set a metal bowl over the pot. Add ½ cup of butter, a cup of sugar, and 2 squares of the chocolate to the metal bowl (top of broiler). Stir frequently until the butter and chocolate are fully melted. Next, dissolve 1 ½ teaspoons of instant coffee in 2 tablespoons of hot water. Pour the coffee into the melted butter and chocolate, and mix until smooth. Remove the chocolate mixture from the heat and let cool until it is barely warm. Add 2 eggs that have been whisked together with 1 teaspoon of vanilla to the cooled chocolate mixture. In a separate bowl, mix ½ cup flour and a pinch of salt together, then whisk it into the chocolate mixture until it becomes smooth again. Now spread this mixture out into a greased baking pan and bake in the center of the oven for 25-35 minutes, or until the top is just set. While the brownies cook, let’s make the icing.
